Well, this is a post I owe to cooking maven Giada, as well as Laura of "French Food at Home" (one of my very fave cooking shows; and now, at least in the Pacific Northwest, it seems that's in on at a regular time slot, from 11:30 - noon). 
While Laura was recently cooking a Cornish Game Hen recipe, she reached across her counter and removed some parsley from a nice little pot of the verdant green stuff sitting pleasantly in a corner. 
Wow! What a concept! Parsley that doesn't need to yellow, (and worse) in the refrigerator; until, in desperation, one looks for some kind of recipe (ideas, anyone?) that takes just oodles and oodles of parsley! Credit also goes to the sites "In My Kitchen Garden" and "Simply Recipes," where I reaffirmed the wisdom of this idea, très simple, and also learned that mint can actually root when stored in water. 
And, of course, I'd seen the same on Giada's show.

So, having just bought some organic parsley at one of my go-to health food stores, I took out the two bunches and put then in cold water in mason jars on the counter. They look festive and fresh -- for a day or two.
Hence, in my experience, I would say that one needs to put a parsley plant in a pot: not just cut parsley. As I state above, the mint may root on its own; I haven't yet tried it. I'm looking forward to making that Cornish Game Hen recipe and many other green delectables!

Then this recipe might be just the thing for an unusual post-Valentine's Day dinner or snack.
