Anywhere between 1/100 and 1/133 people have celiac disease; many more either have gluten intolerance, gluten sensitivity or allergy, or eat gluten free because they think it's healthier. Either way, it's important for those who eat gluten free to be heard, and make changes in the choices available that are vital to their health. Enjoy the articles below! Parents protest in Florida over measures taken for a child's potentially fatal peanut allergy.

March 24 - April 5, 2011. A story just aired on CNN: in Florida, parents are protesting the extra measures a school is taking to comply with what school officials believe is necessary under the Americans With Disabilities Act (ADA) to protect a child with a potentially fatal peanut allergy. These measures -- from my memory of the newscast -- include requiring all children to wash their hands before and after lunch.
