The first time I ever cooked millet, it ended up as a mushy mess. Why? Probably because I put curry in the rice cooker at the same time! It's taken a really silly amount of time for me to attempt it again -- especially as it's really quite good!
Now, millet looks just like quinoa, but the grains are a little larger. And, guess what? It's much less expensive! (Last time I checked, quinoa was running about $3.99/lb. -- even at Trader Joe's -- and organic bulk millet at my local health food store was $1.49).
Nutritionally, it's about on-par with quinoa and buckwheat -- in other words, much better than, say, potato starch or tapioca. It cooks up just like rice, nice and fluffy. Try it today!
