
But by far the yummiest is a good-quality gluten free pasta with pepperjack cheese grated all over the top.
Walk into Whole Foods or any upscale/gourmet/healthy market, and you can easily pay five dollars and up for a pound of gluten free dried pasta.
I've tasted some of these brands, and they're great.
But I don't like paying five dollars for a package of pasta when regular (non gluten free) pasta, costs a lot less.
So, here a few of my go-to brands that range between two and three dollars per poud:
1. Ronzoni gluten free pasta. Ronzoni includes both corn flour and quinoa flour, although white and brown rice flours are the first two ingredients (which means there is more of them, as ingredients are always listed most to least). The corn and quinoa means that it has more flavor and doesn't get as mushy as pure brown rice flour pasta.
2. 365 Whole Foods Market Gluten Free Penne Rigate. Like Ronzoni, 365 brand contains corn flour (both yellow and white).
Alrighty then. And this is what's so great about this recipe. All you have to do is cook the pasta and cut very thin slices of pepper jack cheese (Pepperjack cheese is Monterey jack (it melts easily) cheese with hot peppers bits here and there to give it a little heat).
Add the cheese to the pasta in layers. make sure the pasta has just been strained and is still very hot as this will melt the cheese.
If you want, add breadcrumbs and briefly stir-fried red peppers and/or sun-dried tomatoes.
