Anywhere between 1/100 and 1/133 people have celiac disease; many more either have gluten intolerance, gluten sensitivity or allergy, or eat gluten free because they think it's healthier. Either way, it's important for those who eat gluten free to be heard, and make changes in the choices available that are vital to their health.
