Meatloaf recipe (Saturday night, Olympics): Gluten free, dairy free, egg free

Gluten Free Safari Olympics Saturday night meatloaf
(serves 2 with a little leftover)
ground beef (3/4 - 1 pound)
1/2 c gf oats (I use Trader Joe's, $3.99 for 2 pounds)
onion, chopped
green pepper, chopped
tomatoes, about 3/4 c, canned, fire roasted (I use Muir Glen Organic)
1/s c corn or other chips, gluten free, lightly crumbled (I am partial to Whole Foods blue corn organic chips, $2.99 16 oz., or Food Should Taste Good Multigrain chips (they're hexagonal, check to ensure they're gf, they always have been to my knowledge)
6 cloves garlic, chopped or minced
1 tablespoon psyllium husks (a jar is about $9.99 at Trader Joe's)
1/2 tablespoon ground cumin
1/4 teaspoon black pepper
1/2 tablespoon oregano
1/4 teaspoon dried red peppers
1/8 cup protein nut milk or other dairy substitute
2 tablespoons soy sauce, gluten free, such as Tamari brand
1 teaspoon baking powder
at least 1/2 c ketchup, gluten free (I use Annie's Organic)
Mix everthing except the ketchup, 1/2 the oats and the chips. Bake 350 degrees 40 minutes; take out and mix in 2nd half of oats, chips, and squeeze ketchup over the top. Cook at 400 degrees 20 more minutes. Check to ensure meat totally done in center. Serve with a bit of ketchup on top.
