Xanthan Gum: Does it cause you any problems? continued . . .

. . . After reading through a few discussions in various forums, there seems to be anecdotal evidence, at least, that many people react (and not well!) to xanthan gum.
Another major gluten free writer has found some of the same adverse reactions.
In the bread recipe last night, I used a tablespoon. That seems like a lot.
In fact, I just checked the ingredients of the Glutino sourdough bread mix that I used to make the last loaf of bread in the breadmaker. They included guar gum, but not xanthan gum. And I had no reactions after consuming that loaf. Hmmm . . .
Food for thought -- pun intended. I think that from now on, I'm going to be using something other than xanthan gum as a binder!
